Mother's Day was quite different for us this year. We spent it quietly here at home...just the four of us. My mother lives thousands of miles away in another world and my mother-in-law was on a trip. It was different, but...good! I was thoroughly celebrated by my Love and my little loves and really, it was the perfect day.
To the woman who gave me life and the woman who gave my husband life, how we love you and thank God for blessing our lives with godly, loving mothers who also love our childrren so completely.

This is by far one of my favorites of my mother-in-law and Chloe. These little strawberries were the celebrated hard work of my father-in-law and they were both so pleased with the firstfruits! |

I was in the mood to try a different pizza crust recipe so made a 2-cheese pizza and a ham/cheese pizza. Delicious! Would definitely use this recipe again (these recipes can all be found on my Pinterest Boards, by the way!) |

Mongolian Beef...I has been so hungry for Mongolian Beef. It was good but I think I can improve the meat part. The meat was tough but that was my fault not the recipe's fault! Try, try again! |

Homemade Nacho Cheese...Noah ate almost the entire bag of chips with this cheese...all by himself. Granted our bags of tortilla chips are not American sized, thank God! Would certainly use this recipe again, as well. |

Bolinhas de Chuva...a sweet, soft dough deep fat fried and rolled in cinnamon and sugar...my children and I just finished them off five minutes ago. I have been wanting to try making this Brazilian snack for quite some time and today decided to just do it! I shy away from anything fried but hey, as Brazilians say, "Deu a vontade de comer, entao comemos!" (we were hungry for it, so we ate it!). Super simple and fun recipe...and TASTY! |
So, I've been busy. Classes continue, everyone still loves a hot meal on the table at least once a day, little man has been having issues making it to the bathroom in time (after months of being completely trained, he has gotten really lazy and also uses peeing on the floor to punish us when he is mad) so my laundry pile has doubled recently. Also, during the week Noah is no longer napping as he sleeps in the van on the way home from school so it ruins his nap. Oh, sigh. How I miss naps. However, the upside is if neither child sleeps in the afternoon, by 7:30pm it is silence around here! I have a long list of stuff I keep thinking I will get done but after the littles are all tucked in...all I can think about is bed!
I am most grateful to report that we have made it one month without an ER visit, hospitalization or any other crisis of its kind. God is good...all the time!
